The selectables don't fully behave like real select tags. Here is what's missing:

Keyboard Entry

When you have focus on a particular selectable you should be able to select any given option simply by typing it in. This is extremely useful for long lists of options. You should also be able to use the up/down arrow keys to navigate the choices. A CSS class should be added to selectables when focused so they can be styled accordingly

Tabs & Indexes

With regular selects you can focus on them simply by hitting Tab in a preceding input. Selectables are skipped right now. Also you they should respect the tabindex attribute so you can set the proper flow/order of the form.

Disabling

RIght now Selectables pay no attention to the disabled attribute

These 3 features would make Selectable's behavior identical to what people expect when filling out forms. It would also put Selectable head and shoulders above every other offering as I have yet to find a framework or plugin to meet these specs.
